- 1 lb ground beef or Italian sausage
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 1 (14.5 oz) can fire-roasted diced tomatoes
- 4 cups low-sodium chicken or vegetable broth
- 8 oz lasagna noodles, broken into pieces
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- 1 tsp dried basil
- 1 tsp dried oregano
Instructions
- In a large pot over medium heat, brown the ground beef or sausage for about 5-7 minutes; drain excess fat.
- Add chopped onion and minced garlic; sauté until onions are translucent (about 3-4 minutes).
- Stir in canned tomatoes and broth; bring to a simmer.
- Add broken lasagna noodles; cook for about 10-12 minutes until tender.
- Reduce heat and stir in ricotta cheese; top with mozzarella just before serving.
