Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
- In a large bowl, whisk together flour, baking powder, and salt.
- In another bowl, beat together eggs, sugar, oil, lemon juice, lemon zest, and vanilla until creamy.
- Gently fold the wet ingredients into the dry ingredients without overmixing.
- Toss blueberries in a little flour and carefully fold them into the batter.
- Pour the batter into the prepared pan and bake for 50-60 minutes or until a toothpick comes out clean.
