Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
- In a large bowl, whisk together flour, sugar, baking powder, and salt.
- In another bowl, mix eggs, buttermilk, melted butter, lemon juice, and zest until smooth.
- Gently fold the wet ingredients into the dry mixture until just combined.
- Carefully add blueberries and fold gently to avoid breaking them.
- Pour batter into the prepared loaf pan and bake for 60-70 minutes or until a toothpick comes out clean.
- Allow cooling before slicing.
