Instructions
- Preheat oven to 350°F (175°C) and line two baking sheets with parchment paper.
- In a large bowl, cream the butter and granulated sugar until light and fluffy, about 2-3 minutes.
- Add the lemon zest and juice, mixing until combined.
- In another bowl, whisk together flour, baking powder, and salt. Gradually add this mixture to the wet ingredients until just combined.
- Scoop tablespoon-sized dollops of dough onto the prepared baking sheets, spacing them about 2 inches apart.
- Bake for 10-12 minutes or until edges are lightly golden. Allow cooling on wire racks before dusting with powdered sugar.
