Instructions
- Preheat your oven to 350°F (175°C) and grease a loaf pan.
- In a bowl, whisk together flour, baking powder, and salt.
- In another bowl, cream softened butter and sugar until light and fluffy.
- Beat in eggs one at a time followed by lemon zest.
- Mix in milk and lemon juice until combined.
- Gradually fold in dry ingredients until just combined; do not overmix.
- Pour batter into the loaf pan and bake for 50-60 minutes or until golden brown and a toothpick comes out clean.
- Let cool for 10 minutes before transferring to a wire rack; glaze if desired.
