Ingredients

  • ½ cup fresh lemon juice
  • Zest of 2 lemons
  • Lemon glaze (optional): 1 cup powdered sugar + 2 tbsp lemon juice

Instructions

  2. In a bowl, whisk together flour, baking powder, and salt.
  3. In another bowl, cream softened butter and sugar until light and fluffy.
  4. Beat in eggs one at a time followed by lemon zest.
  5. Mix in milk and lemon juice until combined.
  6. Gradually fold in dry ingredients until just combined; do not overmix.
  7. Pour batter into the loaf pan and bake for 50-60 minutes or until golden brown and a toothpick comes out clean.
  8. Let cool for 10 minutes before transferring to a wire rack; glaze if desired.
