- 2 lbs Yukon Gold potatoes, peeled and cut into 1-inch chunks
- 1/4 cup fresh lemon juice (about 2 lemons)
- 4 garlic cloves, minced
- 1/4 cup extra virgin olive oil
- 2 tbsp fresh rosemary or thyme, chopped
- Salt and pepper to taste
Instructions
- Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
- In a large bowl, mix lemon juice, garlic, olive oil, salt, pepper, and herbs.
- Add potato chunks and toss until coated.
- Marinate for at least 30 minutes.
- Spread potatoes on the baking sheet in a single layer.
- Roast for 45-50 minutes, flipping halfway through, until golden brown and crispy.
- Garnish with additional herbs or lemon zest before serving.
