Ingredients
- 4 large russet potatoes
- 1 cup shredded sharp cheddar cheese
- 1 cup cooked bacon bits
- 1 cup full-fat sour cream
- ½ cup chopped green onions
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- Preheat oven to 400°F (200°C).
- Scrub and dry the potatoes; poke holes all over with a fork.
- Rub olive oil on each potato and sprinkle with salt.
- Bake directly on the oven rack for 45-60 minutes until tender.
- Let cool slightly, then slice open and fluff the insides with a fork.
- Load up with cheese, bacon, sour cream, green onions, and any other desired toppings.
