- 4 large russet potatoes (about 1 lb each)
- 2 tbsp olive oil
- 1 cup sharp cheddar cheese, shredded
- 1 cup crispy bacon bits
- 1 cup sour cream
- ¼ cup chives or green onions, finely chopped
- Salt to taste
Instructions
- Preheat the oven to 425°F (220°C).
- Wash and dry the russet potatoes; poke holes all over with a fork.
- Rub each potato with olive oil and sprinkle generously with salt.
- Place potatoes directly on the oven rack or on a foil-lined baking sheet.
- Bake for 45-60 minutes until tender, flipping halfway through.
- Let cool slightly, then slice open lengthwise and fluff insides with a fork.
- Load each potato with cheese, bacon bits, and sour cream.
- Garnish with chives or green onions before serving.
