- 4 boneless, skinless chicken breasts
 - 1 cup freshly grated parmesan cheese
 - 1 cup panko breadcrumbs
 - 2 tablespoons fresh parsley, chopped
 - 1 teaspoon garlic powder
 - 2 tablespoons extra virgin olive oil
 - Salt and pepper to taste
 
Instructions
- Preheat your oven to 400°F (200°C) and lightly grease a baking dish.
 - In a bowl, mix panko breadcrumbs with parmesan cheese, garlic powder, salt, and pepper.
 - Dip each chicken breast in olive oil, then coat thoroughly with the breadcrumb mixture.
 - Place the coated chicken in the prepared baking dish and bake for 25-30 minutes until golden brown and cooked through (internal temperature should reach 165°F / 74°C).
 - Sprinkle fresh parsley on top before serving.
