  • 2 bay leaves
  • 1/2 tsp cayenne pepper
  • 4 cups low-sodium chicken broth
  • 2 cups cooked white or brown rice
  • 2 green onions (for garnish)

Instructions

  1. Soak the red beans overnight for optimal texture.
  2. In a large pot over medium heat, add oil and sauté chopped onion, celery, and bell pepper until softened (5-7 minutes).
  3. Stir in minced garlic and diced Andouille sausage; cook until sausage is browned (3-4 minutes).
  4. Add soaked red beans, bay leaves, cayenne pepper, salt, and pepper; mix well.
  5. Pour in chicken broth until beans are covered; bring to a boil then reduce heat to low. Simmer for 1 to 1.5 hours until beans are tender.
  6. Cook rice according to package instructions while beans simmer.
  7. Remove bay leaves before serving over rice; garnish with chopped green onions.
