- 1 cup dried red beans (soaked overnight)
 - 8 ounces Andouille sausage (diced)
 - 1 medium sweet onion (chopped)
 - 1 green bell pepper (chopped)
 - 2 stalks celery (chopped)
 - 4 cloves garlic (minced)
 - 2 bay leaves
 - 1/2 tsp cayenne pepper
 - 4 cups low-sodium chicken broth
 - 2 cups cooked white or brown rice
 - 2 green onions (for garnish)
 
Instructions
- Soak the red beans overnight for optimal texture.
 - In a large pot over medium heat, add oil and sauté chopped onion, celery, and bell pepper until softened (5-7 minutes).
 - Stir in minced garlic and diced Andouille sausage; cook until sausage is browned (3-4 minutes).
 - Add soaked red beans, bay leaves, cayenne pepper, salt, and pepper; mix well.
 - Pour in chicken broth until beans are covered; bring to a boil then reduce heat to low. Simmer for 1 to 1.5 hours until beans are tender.
 - Cook rice according to package instructions while beans simmer.
 - Remove bay leaves before serving over rice; garnish with chopped green onions.
