Ingredients

  • 1 cup glutinous rice
  • 1 cup full-fat coconut milk
  • ½ cup granulated sugar
  • ¼ tsp salt
  • 2 ripe mangoes, peeled and sliced
  • 1 tbsp toasted sesame seeds (optional)

Instructions

  1. Soak the glutinous rice in cold water for at least 4 hours or overnight.
  2. Drain the rice and steam it in a bamboo steamer lined with cheesecloth over simmering water for 20-30 minutes until tender.
  3. In a saucepan, heat the coconut milk with sugar and salt over medium heat until dissolved (do not boil).
  4. Transfer the steamed rice to a bowl and mix in half of the coconut sauce while warm.
  5. Serve the sticky rice on plates, drizzled with remaining coconut sauce, topped with mango slices, and sprinkle with sesame seeds if desired.
