- 3–4 boneless, skinless chicken breasts
- 8 oz fettuccine or penne pasta
- 4 cloves fresh garlic, minced
- 1 cup heavy cream
- 1 cup grated parmesan cheese
- 2 cups fresh spinach
- 2 tsp Italian seasoning
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Prep your ingredients: Mince garlic and rinse spinach.
- Sauté the chicken: In a large skillet, heat olive oil over medium heat and season chicken with salt and pepper. Cook each side until golden brown, about 6-7 minutes.
- Add garlic & spinach: Remove chicken and add minced garlic to the skillet, sautéing until fragrant (about 30 seconds). Add spinach until wilted.
- Create the sauce: Pour in heavy cream and stir in parmesan cheese until melted and smooth.
- Cook pasta: Boil water in another pot and cook pasta until al dente according to package instructions; save some pasta water.
- Combine: Slice chicken into strips, add back into the sauce with drained pasta, and mix well. Use reserved pasta water if needed for desired consistency.
