- 4 boneless, skinless chicken breasts (about 1.5 lbs)
- 3 cloves fresh garlic, minced
- 12 oz pasta tortellini (fresh or frozen)
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 2 cups fresh spinach
- 1 cup low-sodium chicken broth
- 2 tsp Italian seasoning
- 2 tbsp olive oil
Instructions
- Chop garlic finely and dice chicken into bite-sized pieces.
- In a large skillet, heat olive oil over medium heat. Sauté diced chicken until golden brown (7-10 minutes).
- Add chopped garlic and Italian seasoning to the skillet; sauté for about 1 minute until fragrant.
- Pour in heavy cream and chicken broth; stir gently and simmer for about 5 minutes until slightly thickened.
- Stir in tortellini and spinach; cook until the tortellini is tender (5-7 minutes) and spinach wilts.
- Remove from heat and mix in grated Parmesan cheese until melted and creamy. Adjust seasoning if necessary before serving.
