- 1 cup cake flour
- 1 cup granulated sugar
- 4 large eggs (room temperature)
- 2 tbsp matcha powder (high-quality)
- 1 cup whole milk
- 1 cup sweetened condensed milk
- 1 cup evaporated milk
- 1 cup heavy cream
- 1 tsp vanilla extract
- 2 tbsp powdered sugar
- Additional matcha powder (for garnish)
Instructions
- Preheat oven to 350°F (175°C). Grease a 9×13 inch baking pan.
- In a bowl, whisk together cake flour and matcha powder.
- In a separate bowl, cream butter and sugar until light and fluffy. Add eggs one at a time, mixing well after each addition.
- Gradually add flour mixture alternating with whole milk until just combined.
- Pour batter into the pan and bake for 30-35 minutes or until a toothpick comes out clean.
- While baking, whisk together sweetened condensed milk, evaporated milk, heavy cream, and vanilla extract.
- Once cooled, poke holes in the cake and pour the milk mixture over it. Let soak for at least an hour (overnight is ideal).
- Whip heavy cream with powdered sugar to soft peaks and spread over the cake. Dust with additional matcha powder before serving.
