  • 1 cup cake flour
  • 1 cup granulated sugar
  • 4 large eggs (room temperature)
  • 2 tbsp matcha powder (high-quality)
  • 1 cup whole milk
  • 1 cup sweetened condensed milk
  • 1 cup evaporated milk
  • 1 cup heavy cream
  • 1 tsp vanilla extract
  • 2 tbsp powdered sugar
  • Additional matcha powder (for garnish)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13 inch baking pan.
  2. In a bowl, whisk together cake flour and matcha powder.
  3. In a separate bowl, cream butter and sugar until light and fluffy. Add eggs one at a time, mixing well after each addition.
  4. Gradually add flour mixture alternating with whole milk until just combined.
  5. Pour batter into the pan and bake for 30-35 minutes or until a toothpick comes out clean.
  6. While baking, whisk together sweetened condensed milk, evaporated milk, heavy cream, and vanilla extract.
  7. Once cooled, poke holes in the cake and pour the milk mixture over it. Let soak for at least an hour (overnight is ideal).
  8. Whip heavy cream with powdered sugar to soft peaks and spread over the cake. Dust with additional matcha powder before serving.
