Instructions
- Peel and chop the potatoes into even chunks.
- Rinse under cold water to remove excess starch.
- Boil in a large pot of salted water until fork-tender (about 15-20 minutes).
- Drain and let steam escape to achieve fluffiness.
- In a mixing bowl, combine drained potatoes with butter and milk.
- Mash until smooth, being careful not to over-mix.
- Season with salt and pepper to taste.
- Serve warm, topped with gravy or garnished with chives.
