  • 1/2 cup breadcrumbs (regular or panko)
  • 1/4 cup freshly grated Parmesan cheese
  • 2 tsp Italian seasoning
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 cups marinara sauce (homemade or jarred)
  • 4 crusty sub rolls
  • 1 cup shredded mozzarella cheese

Instructions

  1. In a large bowl, combine ground beef, breadcrumbs, Parmesan cheese, Italian seasoning, salt, and pepper. Mix gently until just combined.
  2. Form into small meatballs (about 1 inch in diameter).
  3. Heat olive oil in a skillet over medium-high heat and brown the meatballs on all sides (5-7 minutes).
  4. Pour marinara sauce over meatballs; simmer for 15-20 minutes until cooked through.
  5. Preheat oven to 350°F (175°C). Slice sub rolls lengthwise without cutting all the way through.
  6. Place meatballs into rolls, add extra marinara sauce, and sprinkle with mozzarella cheese.
  7. Bake for 10-12 minutes until the cheese is melted and bubbly.
