- 1 lb lean ground beef
- 1/2 cup breadcrumbs (regular or panko)
- 1/4 cup freshly grated Parmesan cheese
- 2 tsp Italian seasoning
- 1 tsp salt
- 1/2 tsp black pepper
- 2 cups marinara sauce (homemade or jarred)
- 4 crusty sub rolls
- 1 cup shredded mozzarella cheese
Instructions
- In a large bowl, combine ground beef, breadcrumbs, Parmesan cheese, Italian seasoning, salt, and pepper. Mix gently until just combined.
- Form into small meatballs (about 1 inch in diameter).
- Heat olive oil in a skillet over medium-high heat and brown the meatballs on all sides (5-7 minutes).
- Pour marinara sauce over meatballs; simmer for 15-20 minutes until cooked through.
- Preheat oven to 350°F (175°C). Slice sub rolls lengthwise without cutting all the way through.
- Place meatballs into rolls, add extra marinara sauce, and sprinkle with mozzarella cheese.
- Bake for 10-12 minutes until the cheese is melted and bubbly.
