Ingredients

  • 1 lb ground beef (80/20 blend)
  • 1 cup breadcrumbs (plain or Italian)
  • 2 large eggs
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1/2 cup ketchup (plus more for glaze)
  • 2 tbsp brown sugar (for glaze)
  • 1 tbsp Worcestershire sauce
  • – Optional: 1 tbsp mustard (yellow or Dijon)

Instructions

  1. Preheat oven to 350°F (175°C) and prepare a baking dish or loaf pan.
  2. In a skillet, sauté chopped onion in olive oil until translucent, then add minced garlic for one minute.
  3. In a large bowl, mix ground beef, breadcrumbs, sautéed onion and garlic, eggs, Worcestershire sauce, salt, and pepper until well combined.
  4. For the glaze, whisk together additional ketchup, brown sugar (or honey), and apple cider vinegar in a separate bowl.
  5. Shape the meat mixture into a loaf in the baking dish and pour half of the glaze over it before baking.
  6. Bake for about 1 hour, brushing on more glaze halfway through for a shiny finish. Let rest for 10 minutes before slicing.
