  • 2 lbs Yukon Gold potatoes, medium-sized
  • 1/2 cup unsalted butter (1 stick)
  • 4 whole garlic cloves
  • 1 cup low-sodium chicken broth
  • 4 sprigs fresh thyme
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Wash and peel the Yukon Gold potatoes, cutting them into larger chunks (3-4 inches).
  3. In an oven-safe skillet, melt half of the butter over medium heat until bubbling. Add the potato chunks cut-side down and sear for about 5 minutes until golden brown.
  4. Add smashed garlic cloves and fresh thyme around the potatoes.
  5. Carefully pour chicken broth into the skillet until it reaches halfway up the sides of the potatoes.
  6. Transfer the skillet to the oven and bake for 30-35 minutes until fork-tender and golden brown on top. Baste with remaining melted butter halfway through.
