- 2 lbs Yukon Gold potatoes, medium-sized
- 1/2 cup unsalted butter (1 stick)
- 4 whole garlic cloves
- 1 cup low-sodium chicken broth
- 4 sprigs fresh thyme
- Salt and pepper to taste
Instructions
- Preheat your oven to 425°F (220°C).
- Wash and peel the Yukon Gold potatoes, cutting them into larger chunks (3-4 inches).
- In an oven-safe skillet, melt half of the butter over medium heat until bubbling. Add the potato chunks cut-side down and sear for about 5 minutes until golden brown.
- Add smashed garlic cloves and fresh thyme around the potatoes.
- Carefully pour chicken broth into the skillet until it reaches halfway up the sides of the potatoes.
- Transfer the skillet to the oven and bake for 30-35 minutes until fork-tender and golden brown on top. Baste with remaining melted butter halfway through.
