- 1 lb lean ground beef
- 1 can (15 oz) black beans, rinsed
- 1 can (14.5 oz) diced tomatoes with green chilies
- 1 cup frozen corn kernels
- 4 cups tortilla chips
- 2 cups shredded cheddar and Monterey Jack cheese blend
- 2 tsp cumin
- 2 tsp chili powder
Instructions
- Preheat oven to 350°F (175°C). Grease a large baking dish.
- In a skillet, brown the ground beef over medium heat; drain excess fat. Stir in cumin and chili powder until fragrant.
- Add black beans, corn, and diced tomatoes to the beef mixture; simmer for 5 minutes.
- Layer half of the beef mixture in the baking dish. Top with half of the tortilla chips and half of the cheese. Repeat layers.
- Cover with foil and bake for 25 minutes. Remove foil and bake an additional 10-15 minutes until bubbly and golden.
- Let rest for 5-10 minutes before serving.
