  • 1 lb lean ground beef
  • 1 can (15 oz) black beans, rinsed
  • 1 can (14.5 oz) diced tomatoes with green chilies
  • 1 cup frozen corn kernels
  • 4 cups tortilla chips
  • 2 cups shredded cheddar and Monterey Jack cheese blend
  • 2 tsp cumin
  • 2 tsp chili powder

Instructions

  1. Preheat oven to 350°F (175°C). Grease a large baking dish.
  2. In a skillet, brown the ground beef over medium heat; drain excess fat. Stir in cumin and chili powder until fragrant.
  3. Add black beans, corn, and diced tomatoes to the beef mixture; simmer for 5 minutes.
  4. Layer half of the beef mixture in the baking dish. Top with half of the tortilla chips and half of the cheese. Repeat layers.
  5. Cover with foil and bake for 25 minutes. Remove foil and bake an additional 10-15 minutes until bubbly and golden.
  6. Let rest for 5-10 minutes before serving.
