- 1 cup long-grain rice, rinsed
- 1 lb lean ground beef or turkey
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (14.5 oz) diced tomatoes with green chilies
- 1 cup bell peppers, chopped (red, green, or yellow)
- 1 cup shredded cheddar cheese
- 2 tbsp taco seasoning
- 2 cups chicken broth
Instructions
- Preheat your oven to 350°F (175°C). In a large skillet over medium-high heat, brown the ground beef or turkey until fully cooked; drain excess fat.
- Add chopped bell peppers to the skillet and sauté for about 5 minutes until softened.
- Stir in rinsed rice and black beans until well combined.
- Pour in diced tomatoes with juice and taco seasoning; mix thoroughly.
- Add chicken broth; bring mixture to a gentle boil while stirring occasionally.
- Transfer to a greased baking dish, cover with foil, and bake for 30 minutes. Remove foil, sprinkle cheese on top, and bake uncovered for an additional 10-15 minutes until bubbly.
