- 4 ears fresh corn, grilled or roasted
- 8 oz cream cheese, softened
- 1/2 cup sour cream
- 1/4 cup mayonnaise
- 1 tsp chili powder (adjust to taste)
- Juice of 1 lime
- 1/4 cup fresh cilantro, chopped
- 1/2 cup Cotija or feta cheese, crumbled
Instructions
- 1. Grill or roast the corn until slightly charred (10-15 minutes). Once cooled, cut the kernels off the cob.
- 2. In a mixing bowl, blend softened cream cheese, sour cream, and mayonnaise until smooth.
- 3. Stir in chili powder, lime juice, and cilantro. Adjust seasoning as desired.
- 4. Fold in the corn kernels and crumbled cheese gently.
- 5. Cover and chill in the refrigerator for at least 30 minutes before serving.
- 6. Serve with tortilla chips or veggie sticks.
