- 1 lb ground beef (80/20)
 - 8 mini burger buns
 - 4 slices sharp cheddar cheese
 - 1/2 cup dill pickles, sliced
 - 1/4 cup special sauce (mix of 3 tbsp mayonnaise, 2 tbsp ketchup, 1 tsp mustard, 1 tbsp relish, sprinkle of paprika)
 - 1 cup shredded iceberg lettuce
 - 1/4 cup finely chopped sweet onions
 
Instructions
- In a bowl, combine ground beef with salt and pepper. Form into eight small patties.
 - Heat a skillet over medium-high heat. Cook patties for 3-4 minutes on each side until browned and cooked through.
 - During the last minute of cooking, place a slice of cheddar cheese on each patty and cover to melt.
 - While the burgers cook, slice mini buns in half and toast lightly in another skillet until golden brown.
 - Assemble by spreading special sauce on both bun halves, followed by lettuce, patties, pickles, onions, and the top bun.
