- 1 cup chopped dried apricots
- 1.5 cups low-sodium chicken broth
- Fresh cilantro or parsley for garnish
Instructions
- Prep your ingredients: Gather all ingredients and chop the onion and garlic.
- Heat the oil: In a large skillet, heat olive oil over medium-high heat until shimmering.
- Sauté onions: Add chopped onions and sauté until translucent (about 5 minutes).
- Add garlic & spices: Stir in minced garlic, cumin, paprika, cinnamon, salt, and pepper; cook until fragrant (about 1 minute).
- Brown the chicken: Nestle chicken thighs into the spice mixture; brown on both sides (4-5 minutes each) until golden.
- Add liquids: Pour in chicken broth and add chopped dried apricots; bring to a gentle simmer.
- Simmer: Cover skillet and let simmer on low for about 30 minutes until the chicken is tender.
