- 2 ripe tomatoes, diced
- 2 green chilies, finely chopped (adjust to taste)
- ¼ cup fresh cilantro, chopped
- ½ tsp turmeric powder
- ½ tsp cumin powder
- ½ tsp red chili powder
- 2 tbsp butter or oil
Instructions
- Chop onions, tomatoes, and green chilies; set aside.
- In a pan over medium heat, melt butter or oil and sauté onions until golden brown (about 5 minutes).
- Stir in diced tomatoes along with turmeric, cumin powder, and red chili powder. Cook until tomatoes soften (3-4 minutes).
- In a bowl, whisk eggs until fluffy, then pour into the pan. Stir continuously until fully cooked (4-5 minutes).
- Fold in chopped cilantro and serve hot with toasted bread or parathas.
