- 4 boneless, skinless chicken breasts (about 1.5 lbs)
 - 2 tsp olive oil
 - 5 garlic cloves, minced
 - 8 oz fettuccine or penne pasta
 - 8 oz cream cheese, softened
 - 1 cup freshly grated Parmesan cheese
 - 2 cups fresh spinach or broccoli florets
 - 2 tsp Italian seasoning
 - 1 cup low-sodium chicken broth
 - Salt and pepper to taste
 
Instructions
- Lightly coat the bottom of your crockpot with olive oil.
 - Place the chicken breasts in the crockpot and season generously with salt, pepper, and Italian seasoning.
 - Add minced garlic and pour chicken broth over the chicken until just covered.
 - Stir in softened cream cheese until well combined.
 - Cover and cook on low for 6-8 hours or high for 3-4 hours until the chicken is tender.
 - Shred the chicken directly in the pot and stir in cooked pasta along with spinach or broccoli until wilted.
 - Mix in grated Parmesan cheese until everything is well blended.
