  • 2 tsp olive oil
  • 5 garlic cloves, minced
  • 8 oz fettuccine or penne pasta
  • 8 oz cream cheese, softened
  • 1 cup freshly grated Parmesan cheese
  • 2 cups fresh spinach or broccoli florets
  • 2 tsp Italian seasoning
  • 1 cup low-sodium chicken broth
  • Salt and pepper to taste

Instructions

  1. Lightly coat the bottom of your crockpot with olive oil.
  2. Place the chicken breasts in the crockpot and season generously with salt, pepper, and Italian seasoning.
  3. Add minced garlic and pour chicken broth over the chicken until just covered.
  4. Stir in softened cream cheese until well combined.
  5. Cover and cook on low for 6-8 hours or high for 3-4 hours until the chicken is tender.
  6. Shred the chicken directly in the pot and stir in cooked pasta along with spinach or broccoli until wilted.
  7. Mix in grated Parmesan cheese until everything is well blended.
