- 1 cup extra virgin olive oil
- 1 cup granulated sugar
- 2 cups all-purpose flour
- 2 tsp baking powder
- 3 large eggs, room temperature
- Zest of 1 lemon or orange
- 1 cup whole milk or yogurt
- Optional: Powdered sugar for dusting
Instructions
- Preheat your oven to 350°F (175°C). Grease a round cake pan with olive oil or line it with parchment paper.
- In a large bowl, whisk together flour, baking powder, and a pinch of salt.
- In another bowl, beat eggs and sugar until light and fluffy (about 3-4 minutes). Gradually add olive oil while mixing.
- Gently fold in the dry ingredients along with milk or yogurt and citrus zest until just combined.
- Pour the batter into the prepared pan and bake for 30-35 minutes, or until golden brown and a toothpick inserted in the center comes out clean.
- Let cool for about 10 minutes before transferring to a wire rack. Dust with powdered sugar if desired.
