- 3 large eggs (room temperature)

Instructions
- Preheat the oven to 350°F (175°C). Grease a 9-inch round cake pan or line it with parchment paper.
- In a large bowl, whisk together eggs and granulated sugar until pale and frothy (about 3 minutes).
- Gradually drizzle in the olive oil while whisking to create a glossy mixture.
- Add lemon zest, lemon juice, baking powder, and salt; stir gently until combined.
- Fold in the flour carefully until just mixed.
- Pour the batter into the prepared pan and bake for 30-35 minutes or until a toothpick comes out clean.
- Cool in the pan for 10 minutes before transferring to a wire rack. Dust with powdered sugar before serving if desired.
