- 1/4 cup mayonnaise

- 1 tbsp freshly squeezed lemon juice

Instructions
- Prepare onions: Peel and slice onions into thick rings.
- Make batter: In a bowl, whisk together flour, baking powder, salt, and pepper. Gradually add buttermilk and eggs until smooth.
- Coat onion rings: Dip each ring into the batter, allowing excess to drip off.
- Heat oil: In a deep pot or fryer, heat oil to 350°F (175°C).
- Fry rings: Cook in batches for about 3-4 minutes until golden brown and crispy.
- Drain: Remove from oil and drain on paper towels.
