Instructions
- Preheat the oven to 425°F (220°C).
- Wash and dry the baby potatoes thoroughly, then halve or quarter them based on size.
- In a large bowl, toss the potatoes with olive oil, garlic powder, chopped herbs, salt, and pepper until well coated.
- Spread the seasoned potatoes in a single layer on a baking sheet lined with parchment paper.
- Roast for 25-30 minutes until golden brown and fork-tender, shaking the pan halfway through for even cooking.
- Let cool briefly before serving; garnish with additional herbs if desired.
