- 4 boneless, skinless chicken breasts (about 1.5 lbs)
- 2 tbsp olive oil
- 1 tsp salt
- ½ tsp black pepper
- 2 tsp fresh thyme or rosemary
- 3 garlic cloves, minced
- 1 cup low-sodium chicken broth
- Juice of 1 lemon
Instructions
- Pat the chicken breasts dry with paper towels and season both sides with salt and pepper.
- Heat olive oil in a large skillet over medium-high heat until shimmering.
- Place the seasoned chicken in the skillet and cook undisturbed for about 6-7 minutes per side until golden brown and cooked through (internal temperature should reach 165°F).
- Add minced garlic and fresh herbs around the chicken during the last few minutes of cooking.
- Pour in chicken broth and lemon juice, allowing it to simmer for a couple of minutes to create a sauce.
- Serve the chicken drizzled with the sauce.
