- 4 boneless, skinless chicken breasts (about 1.5 lbs)
- 2 tsp smoked paprika
- 2 tbsp olive oil
- 4 cloves fresh garlic, minced
- 1 medium onion, diced
- 1 cup low-sodium chicken broth
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Prep your ingredients by dicing the onion and mincing the garlic.
- Heat olive oil in a large skillet over medium-high heat. Sear chicken breasts for about 5 minutes on each side until golden brown. Remove from skillet.
- In the same skillet, sauté diced onions and minced garlic until translucent.
- Stir in smoked paprika, salt, and pepper; combine well with onions and garlic.
- Pour in chicken broth and scrape any browned bits from the pan. Return chicken to skillet, reduce heat, and simmer for 20 minutes until fully cooked.
- Garnish with fresh parsley before serving alongside rice or bread.
