- 4 boneless, skinless chicken breasts
- 1 cup freshly grated Parmesan cheese
- 1 cup breadcrumbs (plain or Italian-seasoned)
- 1/4 cup chopped fresh parsley
- 2 large eggs
- 1 tsp garlic powder
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Pat chicken breasts dry and season both sides with salt and pepper.
- In a bowl, mix Parmesan cheese, breadcrumbs, garlic powder, and parsley.
- In another bowl, whisk eggs until frothy. Dip each chicken breast into the egg mixture, then press into the breadcrumb mixture until fully coated.
- Place coated chicken on the baking sheet and drizzle with olive oil.
- Bake for 25-30 minutes until golden brown and cooked through.
- Let rest for a few minutes before serving with your choice of sides.
