- 4 boneless, skinless chicken breasts (about 1.5 lbs)
- 1 cup freshly grated parmesan cheese
- 1/2 cup mayonnaise
- 1 cup panko breadcrumbs
- 1 tsp garlic powder
- Salt and pepper to taste
- Fresh parsley (optional for garnish)
Instructions
- Preheat your oven to 400°F (200°C).
- Place chicken breasts between plastic wrap and pound them to about 1/2 inch thick.
- In one bowl, mix mayonnaise and garlic powder until smooth. In another bowl, combine panko breadcrumbs and grated parmesan cheese.
- Dip each chicken breast in the mayo mixture, then coat in the breadcrumb mixture, pressing gently for even coverage.
- Arrange on a parchment-lined baking sheet and bake for 25-30 minutes, until golden brown and internal temperature reaches 165°F (74°C).
- Let rest for 5 minutes before slicing to retain juiciness.
