Instructions
- Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
- In a bowl, whisk together flour, baking soda, and salt until combined.
- In a large mixing bowl, beat together softened butter, granulated sugar, and brown sugar until fluffy (about 2-3 minutes).
- Mix in peanut butter until fully incorporated. Add the egg and vanilla extract; blend until smooth.
- Gradually add the dry ingredients to the wet mixture, stirring gently until just combined.
- Scoop rounded balls of dough onto prepared sheets about 2 inches apart and flatten slightly with a fork in a crisscross pattern.
- Bake for 10-12 minutes or until golden brown around the edges but still soft in the center. Let cool for five minutes on the baking sheet before transferring them to wire racks to cool completely.
