- ½ cup pesto sauce (homemade or store-bought)
- 4 slices crusty bread (baguette or ciabatta)
- 8 oz fresh mozzarella cheese
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Preheat grill or skillet over medium heat. Season chicken breasts with salt and pepper.
- Cook chicken for 6-7 minutes per side until golden brown and internal temperature reaches 165°F (75°C).
- Remove from heat, let rest for a few minutes, then spread pesto on top.
- Slice bread horizontally; drizzle inside with olive oil. Layer with chicken and mozzarella.
- Grill assembled sandwiches for 2-3 minutes on each side until crispy and cheese is melted.
