  • Total Time: 25 minutes
  • Yield: Serves 4

Ingredients

Scale
  • 1 pound ribeye steak, thinly sliced
  • 8 slices provolone cheese
  • 1 large sweet onion, sliced
  • 1 cup bell peppers (red and green), sliced
  • 4 fresh hoagie rolls
  • 2 tablespoons olive oil

Instructions

  1. Prep your ingredients by slicing the ribeye against the grain for tenderness.
  2. Heat olive oil in a skillet over medium heat. Sauté onions and bell peppers until caramelized (5-7 minutes).
  3. Push veggies to one side of the skillet; increase heat to medium-high and add steak slices. Cook until browned but tender (3-4 minutes per side).
  4. Sprinkle provolone cheese over the steak mixture. Cover with a lid and let melt for about 2 minutes.
  5. Slice hoagie rolls open without cutting all the way through and fill with steak and cheese mixture. Add extra veggies if desired.
  6. Serve hot with your favorite sides.
