Ingredients
- 1 cup dried pinto beans (soaked overnight)
- 1 medium onion (chopped)
- 2 cloves garlic (minced)
- 4 cups vegetable broth
- 1 tsp ground cumin
- Salt and pepper to taste
- 2 tbsp extra virgin olive oil
Instructions
- In a large pot, heat olive oil over medium heat. Sauté chopped onions until translucent (about 5 minutes).
- Add minced garlic and sauté until fragrant (about 1 minute).
- Drain soaked pinto beans and add to the pot along with vegetable broth. Stir well.
- Season with cumin, salt, and pepper; stir to combine.
- Bring to a boil, then reduce heat and cover. Let simmer for 45 minutes or until beans are tender.
- Taste and adjust seasoning as needed before serving.
