  • 2 cups powdered sugar (for frosting)
  • 8 oz cream cheese (softened)

Instructions

  1. Preheat oven to 350°F (175°C) and grease two 9-inch round cake pans.
  2. In a food processor, pulse pistachios until finely ground; set aside some whole for decoration.
  3. Cream together butter and sugar in a large bowl until light and fluffy (about 5 minutes).
  4. Beat in eggs one at a time followed by vanilla extract until well combined.
  5. In another bowl, combine flour and baking powder; alternate adding this mixture with milk to the wet ingredients until just combined.
  6. Divide batter between prepared pans and smooth tops.
  7. Bake for 25-30 minutes or until a toothpick comes out clean. Cool completely before frosting.
