- 1 cup shelled, unsalted pistachios
- 3 cups all-purpose flour
- 2 cups granulated sugar
- 1 tablespoon baking powder
- 1 cup softened butter
- 4 large eggs
- 1 teaspoon vanilla extract
- 1 cup whole milk
- 2 cups powdered sugar (for frosting)
- 8 oz cream cheese (softened)
Instructions
- Preheat oven to 350°F (175°C) and grease two 9-inch round cake pans.
- In a food processor, pulse pistachios until finely ground; set aside some whole for decoration.
- Cream together butter and sugar in a large bowl until light and fluffy (about 5 minutes).
- Beat in eggs one at a time followed by vanilla extract until well combined.
- In another bowl, combine flour and baking powder; alternate adding this mixture with milk to the wet ingredients until just combined.
- Divide batter between prepared pans and smooth tops.
- Bake for 25-30 minutes or until a toothpick comes out clean. Cool completely before frosting.
