- 4 medium russet potatoes
- 3 tbsp olive oil
- 1 ½ cups shredded sharp cheddar cheese
- ½ cup cooked bacon bits
- ½ cup sour cream
- ¼ cup chopped green onions
- Salt and pepper to taste
Instructions
- Preheat oven to 400°F (200°C).
- Wash and scrub potatoes; cut each in half lengthwise.
- Scoop out some flesh, leaving a quarter-inch thick shell. Drizzle with olive oil and season with salt and pepper.
- Place cut-side down on a parchment-lined baking sheet and bake for 25 minutes until golden.
- Flip skins over, sprinkle with cheese and bacon bits, then bake for another 10-15 minutes until cheese is melted.
- Cool slightly before topping with sour cream and green onions. Serve warm.
