Ingredients

  • 4 medium russet potatoes
  • 3 tbsp olive oil
  • 1 ½ cups shredded sharp cheddar cheese
  • ½ cup cooked bacon bits
  • ½ cup sour cream
  • ¼ cup chopped green onions
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Wash and scrub potatoes; cut each in half lengthwise.
  3. Scoop out some flesh, leaving a quarter-inch thick shell. Drizzle with olive oil and season with salt and pepper.
  4. Place cut-side down on a parchment-lined baking sheet and bake for 25 minutes until golden.
  5. Flip skins over, sprinkle with cheese and bacon bits, then bake for another 10-15 minutes until cheese is melted.
  6. Cool slightly before topping with sour cream and green onions. Serve warm.
