  • 2 large eggs
  • 1 tsp vanilla extract
  • ½ cup chocolate chips (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a large bowl, whisk together pumpkin puree, brown sugar, granulated sugar, eggs, and vanilla until smooth.
  3. Gradually add flour, baking soda, salt, cinnamon, and nutmeg; mix until just combined.
  4. Fold in chocolate chips if using.
  5. Drop tablespoon-sized scoops of dough onto prepared baking sheets, spacing them about 2 inches apart.
  6. Bake for 12-15 minutes until edges are firm but centers remain soft.
  7. Cool on the baking sheet for 5 minutes before transferring to wire racks.
