Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with liners.
- In a large bowl, whisk together flour, baking powder, cinnamon, and sugar.
- In another bowl, mix pumpkin puree, melted butter, eggs, and vanilla until smooth.
- Beat cream cheese with powdered sugar in a separate bowl until fluffy.
- Combine dry ingredients with the pumpkin mixture until just mixed; avoid overmixing.
- Fill each muffin cup halfway with batter, add a dollop of cream cheese mixture, then top with remaining batter and swirl gently.
- Bake for 20-25 minutes until a toothpick inserted comes out clean.
