Instructions
- Boil potatoes until fork-tender, then drain and cool slightly before peeling.
- In a bowl, mash the cooled potatoes until smooth. Mix in pumpkin puree, egg yolk, and salt.
- Gradually add flour until a soft dough forms; adjust as necessary.
- On a floured surface, knead gently for 1-2 minutes until combined.
- Divide dough into pieces, roll into ropes about half an inch thick, and cut into bite-sized pieces.
- Cook gnocchi in boiling salted water; they are ready when they float to the top (2-3 minutes).
- Toss with your favorite sauce while hot and serve immediately.
