- 1 cup quinoa
- 1 can (15 oz) black beans, drained and rinsed
- 1 medium yellow onion, diced
- 2 cloves garlic, minced
- 1 large egg
- 1/2 cup whole wheat breadcrumbs
- 1 tsp ground cumin
- 1 tsp chili powder
- Salt and pepper to taste
Instructions
- Rinse quinoa under cold water. In a saucepan, combine quinoa with 2 cups of water. Bring to a boil, then reduce heat to low and cover. Cook for about 15 minutes until fluffy.
- In a skillet, heat olive oil over medium heat. Sauté diced onion until translucent (about 5 minutes). Add minced garlic in the last minute.
- In a large bowl, mash black beans until mostly smooth. Stir in cooked quinoa, sautéed onion and garlic, egg, breadcrumbs, cumin, chili powder, salt, and pepper.
- Form mixture into burger-sized patties (about six). Place on a parchment-lined baking sheet.
- Preheat grill or skillet over medium-high heat. Cook patties for about 5 minutes per side until golden brown.
