Ingredients

  • 1 cup quinoa
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 medium yellow onion, diced
  • 2 cloves garlic, minced
  • 1 large egg
  • 1/2 cup whole wheat breadcrumbs
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • Salt and pepper to taste

Instructions

  1. Rinse quinoa under cold water. In a saucepan, combine quinoa with 2 cups of water. Bring to a boil, then reduce heat to low and cover. Cook for about 15 minutes until fluffy.
  2. In a skillet, heat olive oil over medium heat. Sauté diced onion until translucent (about 5 minutes). Add minced garlic in the last minute.
  3. In a large bowl, mash black beans until mostly smooth. Stir in cooked quinoa, sautéed onion and garlic, egg, breadcrumbs, cumin, chili powder, salt, and pepper.
  4. Form mixture into burger-sized patties (about six). Place on a parchment-lined baking sheet.
  5. Preheat grill or skillet over medium-high heat. Cook patties for about 5 minutes per side until golden brown.
