  • 1 tsp coriander powder
  • ½ tsp garam masala
  • 1 tsp fine sea salt (adjust to taste)
  • Water (as needed for batter)
  • Oil for frying (approximately 2 cups)

Instructions

  1. Wash the green chilies thoroughly; cut a slit down one side without halving them.
  2. In a bowl, combine gram flour, cumin powder, coriander powder, garam masala, and salt. Gradually add water to create a thick paste.
  3. Stuff each chili with the prepared mixture using a spoon.
  4. Heat oil in a frying pan over medium flame until hot but not smoking.
  5. Fry the stuffed chilies for about 3-4 minutes on each side until golden brown and crispy.
  6. Remove from oil and drain on paper towels before serving with yogurt or chutney.
