Instructions
- Preheat your oven to 400°F (200°C).
- Chop the bell peppers, zucchini, and cherry tomatoes into uniform pieces.
- In a bowl, toss vegetables with olive oil, minced garlic, salt, pepper, and fresh herbs until well coated.
- Spread the mixture on a baking sheet lined with parchment paper in a single layer.
- Crumble feta cheese generously over the top.
- Bake for 25-30 minutes until vegetables are tender and slightly caramelized.
