  • 1 cup long-grain white rice
  • 4 cups low-sodium chicken broth
  • 2 tbsp olive oil
  • 2 green onions, chopped (for garnish)

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté onions, bell peppers, and garlic until softened.
  2. Add sliced Andouille sausage and Cajun seasoning; cook until sausage is browned.
  3. Stir in rinsed red beans and chicken broth; bring to a gentle boil then reduce heat to simmer.
  4. Mix in rinsed rice, ensuring it’s submerged in the liquid. Cover and let simmer for 20-25 minutes until rice is tender.
