- 1 cup long-grain white rice
- 4 cups low-sodium chicken broth
- 2 tbsp olive oil
- 2 green onions, chopped (for garnish)
Instructions
- Heat olive oil in a large pot over medium heat. Sauté onions, bell peppers, and garlic until softened.
- Add sliced Andouille sausage and Cajun seasoning; cook until sausage is browned.
- Stir in rinsed red beans and chicken broth; bring to a gentle boil then reduce heat to simmer.
- Mix in rinsed rice, ensuring it’s submerged in the liquid. Cover and let simmer for 20-25 minutes until rice is tender.
- Fluff with a fork and serve hot, garnished with chopped green onions.
