  • 1 cup long-grain basmati rice
  • 2 tbsp unsalted butter
  • 1 medium sweet onion, finely chopped
  • 2 cloves fresh garlic, minced
  • 2 cups low-sodium vegetable broth
  • 2 bay leaves
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • Zest of 1 lemon

Instructions

  1. Rinse the basmati rice under cold water until the water runs clear to remove excess starch.
  2. In a large pot over medium heat, melt the butter until bubbly. Add the chopped onions and sauté until translucent.
  3. Stir in the minced garlic along with the rinsed rice and sauté for about two minutes until slightly toasted.
  4. Carefully add vegetable broth, bay leaves, thyme, salt, pepper, and lemon zest. Bring to a gentle boil.
  5. Reduce heat to low, cover tightly, and simmer for 15-20 minutes or until all liquid is absorbed—resist lifting the lid!
  6. Remove from heat but keep covered for an additional 5 minutes. Discard bay leaves and fluff the rice gently with a fork.
