- 1 cup jarred roasted red peppers (no added sugar or preservatives)
- 1/3 cup high-quality tahini
- 2 tbsp freshly squeezed lemon juice
- 2 garlic cloves (adjust to taste)
- 3 tbsp extra virgin olive oil
- Salt and pepper to taste
Instructions
- Gather all ingredients and rinse the chickpeas under cold water.
- In a food processor, combine chickpeas, roasted red peppers, tahini, lemon juice, garlic cloves, and salt. Blend until smooth.
- While blending, slowly drizzle in olive oil until creamy.
- Taste the hummus and adjust salt or lemon juice if needed.
- Transfer to a serving bowl and drizzle extra olive oil on top; garnish with paprika or parsley.
