- 1 can (15 oz) chickpeas, drained and rinsed
- 1 cup roasted red peppers (jarred or homemade)
- 3 tbsp tahini
- 2 cloves garlic, minced
- 2 tbsp fresh lemon juice
- 3 tbsp olive oil
- 1 tsp ground cumin
- Salt and pepper to taste
Instructions
- Gather all ingredients; rinse chickpeas under cold water.
- In a food processor, combine chickpeas, roasted red peppers, tahini, garlic, lemon juice, cumin, salt, and pepper. Blend until smooth.
- Drizzle in olive oil while blending until creamy.
- Taste and adjust seasoning as needed; blend again to combine.
- If too thick, add water one tablespoon at a time until desired consistency is reached.
- Transfer to a serving bowl and garnish with olive oil and paprika if desired.
