Ingredients

  • 1 cup roasted red peppers (jarred or homemade)
  • 3 tbsp tahini
  • 2 cloves garlic, minced
  • 2 tbsp fresh lemon juice
  • 3 tbsp olive oil
  • 1 tsp ground cumin
  • Salt and pepper to taste

Instructions

  1. Gather all ingredients; rinse chickpeas under cold water.
  2. In a food processor, combine chickpeas, roasted red peppers, tahini, garlic, lemon juice, cumin, salt, and pepper. Blend until smooth.
  3. Drizzle in olive oil while blending until creamy.
  4. Taste and adjust seasoning as needed; blend again to combine.
  5. If too thick, add water one tablespoon at a time until desired consistency is reached.
  6. Transfer to a serving bowl and garnish with olive oil and paprika if desired.
