- 1 pound fresh wild-caught salmon
- 1 cup breadcrumbs (plain or panko)
- 2 large eggs, beaten
- 2 green onions, finely chopped
- 1 tablespoon Dijon mustard
- 1 tablespoon freshly squeezed lemon juice
- Salt and pepper to taste
- Oil for frying
Instructions
- Cook the salmon fillets by steaming or baking until flaky (about 15 minutes). Let cool slightly.
- Flake the cooled salmon in a large bowl and mix in breadcrumbs, eggs, green onions, Dijon mustard, lemon juice, salt, and pepper.
- Form the mixture into patties (about ¼ cup each) and shape them to be about 1 inch thick.
- Heat oil in a skillet over medium heat until shimmering. Fry the patties in batches for about 4-5 minutes per side until golden brown.
- Drain on paper towels and serve warm with your favorite dipping sauce.
